Amaranth culture is ancient and modern, widespread but mostly small-scale. Its high grain yield is complemented by a unique composition: gluten-free and with a high content of valuable fatty acids. Amaranth produces abundant biomass, the root system improves the soil much more than common cereals and takes up toxic elements. War-torn regions of SE Ukraine can make use of the crop to raise agriculture from a state of crisis to sustainable development. [ABSTRACT FROM AUTHOR]
